A favourite Indian recipe with a vegetable that is Indian in origin.
To serve: 4

400 gms Yam (suran, thickly sliced)
2 large sized Potato (boiled)
2 tbsps Pure ghee
1 tsp Cumin seeds
1˝ tsps Sesame seeds (til)
1/4 tsp Turmeric powder (optional)
1˝ tsps Red chilli powder
Rock salt (sendha namak)to taste
Fresh coriander leaves (chopped)a few sprigs

Boil suran till done. Cut into small cubes. Reserve cooking liquour. Cut one boiled potato into small cubes and mash the other. Heat ghee in a pan and add cumin seeds. As they begin to change colour add sesame and suran cubes. Mix well and add potato cubes, turmeric powder and red chilli powder. Add cooking liquor and stir. Stir in mashed potato to thicken the gravy. Add rock salt to taste. Garnish with chopped coriander leaves and serve hot.
