A favourite Indian recipe with a vegetable that is Indian in origin.
To serve: 4

400 gms Cottage cheese (paneer, 2 inch pieces)
2 medium sized Tomato (halved & deseeded)
2 medium sized Capsicum (halved & deseeded)
2 medium sized Onion (thickly sliced)
3 tbsps Oil
1 tsp Cumin seeds
2 Red chillies whole (halve)
2 Ginger (julienne, 1 inch pieces)
1-2 Green chilli (chopped)
1˝ tsps Red chilli powder
1/2 tsp Turmeric powder
Salt to taste
1˝ tbsps Vinegar
1 tsp Garam masala powder
2 tbsps Fresh coriander leaves (finely chopped)

Cut tomatoes and capsicums into two inch long slices with one-fourth inch width. Separate the different layers of onions. Heat oil in a kadai. Add cumin seeds. When they change colour add red chillies. Add ginger julienne, green chillies and sliced onions. Sauté for half a minute. Add red chilli powder and turmeric powder. Stir well and add capsicum. Cook for two to three minutes. Add paneer fingers and toss. Add salt and vinegar and cook for two to three minutes. Stir in tomato pieces and garam masala powder. Serve hot garnished with chopped coriander leaves.
