A tasty mixture of all types of vegetables, this recipe is from the eastern part of India.
To serve: 4

100 gms Cabbage (shredded)
10 florets Cauliflower
15 Broad beans (papri, 1 inch pieces)
2 medium sized Sweet potato (1 inch pieces)
2 medium sized White radish (1 inch pieces)
100 gms Red Pumpkin (1 inch pieces)
15 French beans (1 inch pieces)
2 Brinjal (1 inch pieces)
1 large sized Potato (1 inch pieces)
1 tbsp Mustard oil
1/2 tsp Paanch phoron
3 Red chillies whole
1 tsp Turmeric powder
1 tsp Ginger paste
2 Green chilli (slit)
Salt to taste
3/4 tsp Sugar

Heat oil and add paanch phoron and whole red chilies. When they change color, add all the vegetables and stir. Add turmeric powder and ginger paste and mix well. Cover and cook over low heat till all the vegetables are cooked. Increase the heat so that all the moisture is dried up. Add salt, sugar and slit green chilies and mix well. Cook for two minutes and take the pan off the heat. Serve hot
